Mini Kofta & Cheese Pizza 🍕

Soft and fluffy inside, golden and crispy outside — loaded with homemade tomato sauce, juicy beef kofta, and melted mozzarella. Nobody stops at just one!
🛒 Ingredients
Pizza Dough
- 3 cups all-purpose flour
- 1 tsp instant yeast
- 1 tsp sugar
- 1 tsp salt
- 2 tbsp olive oil
- ¾ cup warm water
Homemade Tomato Sauce
- 3 tomatoes, finely chopped
- 2 garlic cloves, crushed
- 1 tsp dried oregano
- Salt & black pepper
- 1 tbsp olive oil
- Pinch of sugar to balance acidity
Topping
- 250g ground beef (seasoned kofta)
- 1 cup shredded mozzarella
- ½ cup shredded cheddar
- Dried oregano for garnish
👩🍳 How to Make It
Mix the flour with yeast, sugar, and salt. Add the olive oil, then gradually pour in the warm water while kneading until you have a smooth, non-sticky dough. Cover and let it rest for 30 minutes in a warm spot.
Sauté the garlic in olive oil for one minute. Add the tomatoes and spices, then let it simmer on low heat for 10 minutes until thickened. Taste and adjust the salt. Pro tip: don't add any water!
Season the ground beef with salt, pepper, cumin, and mixed spices. Knead well, then roll into small balls. Cook them in a dry pan (no oil needed) until cooked through.
Divide the dough into golf ball-sized portions. Press each one by hand into a small circle about half a centimeter thick. Arrange them on a baking tray lined with parchment paper.
Spoon sauce onto each base, add a kofta ball, then top generously with cheese 😍. Sprinkle oregano on top. Bake at 200°C (390°F) for 18–20 minutes until the cheese is golden and the crust is cooked through.
💡 Tips From My Personal Experience
- For a crispier crust: add a tablespoon of white vinegar to the water when making the dough.
- No mozzarella? Shredded Gouda or Parmesan works beautifully as a substitute.
- The dough can be made a day ahead and stored in the fridge overnight.
- For an extra crispy bottom: preheat the baking tray in the oven before placing the dough.
- Season the kofta ahead of time and refrigerate for an hour — the flavor difference is huge!
